Así vuelve a refrendarlo la prestigiosa lista que elige 50 Top Pizza, la guía más prestigiosa en el sector. En su última edición, celebrada en Londres, ha vuelto a situar a Grosso Napoletano como la Mejor Cadena de Pizza Artesanal del Mundo.Socio y Director de Operaciones en Grosso Napoletano desde julio 2019, tras 10 años de carrera en L’Oréal en Departamentos de Marketing y Direcciones Comerciales.

Hoy entrevistamos a  Bruno González Castro, Partner&Managing Director en Grosso Napoletano, nos cuenta su historia y las claves que lo han hecho posible.

  • ¿Qué inspiró a Hugo y Coke a fundar Grosso Napoletano y cómo ha evolucionado la empresa desde su inicio hasta ahora?

En el año 2009 Coke y Hugo coinciden viviendo en Nueva York y comienzan a compartir diferentes impresiones sobre la revolución que está sufriendo en ese momento la hostelería, más concretamente, la hamburguesa. Durante esos años había un boom alrededor de todo lo que tenía que ver con este plato y estaba pasando de ser una comida considerada como “fast food” a convertirse en algunos casos en algo gourmet, con diferentes carnes, panes, salsas, acompañamientos… En ese mismo momento detectaron que la misma tendencia empezaba a trasladarse al mundo de la pizza. Ambos se dieron cuenta de que era una comida que todo el mundo, sea de la ciudad que sea o de la cultura que sea, la siente como suya pero que realmente era una gran desconocida más allá de su origen italiano. Esta falta de conocimiento hizo que pensaran que se había perdido la esencia original de la pizza y que eran muchos los que estaban tratando de re-inventarla sin respetar su verdadero origen.

En 2016 decidieron viajar a Nápoles buscando el origen de la pizza napolitana. En ese momento fueron conscientes de que siendo fieles a la tradición se podía demostrar que una buena pizza a un precio asequible era posible. Y esta es una de las principales razones de ser hoy en día de Grosso Napoletano, la necesidad de que el mundo entero entienda, respete y disfrute la verace pizza napoletana, porque es fundamental que todo en la vida mantenga su esencia, su originalidad, su herencia cultural y al fin y al cabo todo aquella que las hace únicas.

  • ¿Cómo fue tu entrada?

En 2019, con la ambición de hacer escalar el concepto, me incorporo al proyecto para liderar la organización tras 10 años de experiencia en una multinacional líder del retail y el consumo como L’Oréal. El reto pasaba por consolidar el modelo, crear la estructura organizativa y diseñar la estrategia que permitiera llevar Grosso al siguiente nivel. Pasar de los 70 empleados y 7 restaurantes de ese momento a los 50 restaurantes y más de 700 empleados actuales.

  • Grosso Napoletano ha crecido de manera impresionante en los últimos años. ¿Cuáles consideras que han sido las claves de este crecimiento?

La realidad es que es algo que nunca hubiéramos imaginado. La evolución de la empresa ha sido continuada en el tiempo, pero es cierto que los últimos años han supuesto un antes y un después en la historia de la compañía. 2023 fue el año de expansión, con 18 aperturas y 2024 ha sido un año de consolidación, de afianzarnos.

Desde el primer local que abrimos en 2017 en la calle Hermosilla de Madrid hasta acabar 2024 con un total de 50 locales (contando con una foodtruck), han pasado muchas cosas, muchas personas y mucho mucho trabajo. Esta evolución es la suma del trabajo, esfuerzo y dedicación de todos los que formamos parte de Grosso, consiguiendo posicionar la marca como la pizzería de referencia en el sector.

Todo este esfuerzo se ha visto recompensado con el premio a Mejor cadena de pizza artesanal del mundo por el prestigioso ranking de 50 Top Pizza, que llevamos obteniendo dos años consecutivos.

  • ¿Cómo describirías la cultura interna de Grosso Napoletano y qué papel juegas como líder en fomentar esta cultura?

En Grosso tenemos unos valores muy fuertes sobre los que trabajamos, coherentes y consistentes a lo largo del tiempo y que se reflejan en todos los aspectos que conforman nuestra cultura de marca.

Nuestra famiglia por encima de todo, cuidando al máximo de nuestros trabajadores; Napoli 3.0, ya que estamos obsesionados con actualizarnos constantemente pero sin perder nuestra esencia; vivir a fuego como modo de vida y darlo todo trabajando; hambre de gol, porque la constancia es la clave para llegar a cualquier objetivo; y la honestidad, porque somos transparentes y contamos las cosas tal y como las sentimos.

  • La industria de la restauración está en constante cambio. ¿Qué papel juega la innovación en Grosso Napoletano y cómo os adaptáis a las nuevas tendencias?

Como ya hemos dicho antes, nuestro propósito es reivindicar la pasión y la autenticidad napolitana por todo el mundo, nuestra misión es disfrutar de la auténtica pizza napolitana a nuestra manera y nuestro sueño ser líderes en pizza artesanal a nivel mundial.

Con esta pretensión, en 2020 creamos nuestra propuesta Senza Glutine di Grosso Napoletano, para llegar también a todos los que no podía acceder a nuestro producto y ponérselo fácil con una pizza de calidad.

Además, en Grosso estamos siempre buscando la manera de innovar a través de colaboraciones con otros pizzaioli o chefs, cambios de carta…siempre de la mano de esa tradición que nos representa.

  • ¿Cuáles son las prácticas de Grosso Napoletano para atraer y retener talento en una industria con alta rotación de personal?

Desde 2017, nuestro equipo humano ha crecido de 5 a más de 700 personas. 65 de estos trabajadores pertenecen a oficinas.

En Grosso contamos con una identidad fuerte y cuidamos a nuestras personas de diferentes formas: Favorecemos los turnos corridos, beneficios por pertenecer a la famiglia, diferentes eventos internos… Además, insistimos en la calidad del management, ofreciendo una formación continua que hace que todos los trabajadores tengan la oportunidad de hacer carrera dentro de la empresa y promocionar dentro de diferentes áreas. Solo en 2023 hubo 121 personas que crecieron dentro de Grosso (tanto dentro de los locales como de local a oficina).

En este sentido, en 2022 creamos La Scuola di Grosso, Pizzería. Desde noviembre de 2022 hasta la actualidad, hemos lanzado más de 10 promociones de pizzaioli, formando a más de 80 profesionales. Solo en 2023 contamos con 6 promociones en las que se formaron 24 alumnos y 16 fueron contratados.

  • ¿Cuáles han sido los mayores desafíos que has enfrentado como CEO y qué aprendizajes has obtenido de ellos?

El principal desafío siempre ha sido conseguir ir dando los pasos hacia la profesionalización, la corporativización y la estructura sin perder la esencia de la marca, el propósito inicial y la agilidad propia de una startup. Conseguir ese equilibrio entre consistencia y adaptabilidad tan necesario en un mercado muy dinámico y competitivo como la hostelería, además de hacerlo con recursos limitados y controlados para que fuera sostenible.

  • ¿Cuáles son tus metas a largo plazo para Grosso Napoletano y cómo visualizas el futuro de la empresa en los próximos años?

En 2017 nacimos para reivindicar la auténtica pizza napolitana y quitarle cuota a la pizza industrial. Poco a poco hemos conseguido esto, aunque todavía queda.

2025 será un año ilusionante en el que vamos a trabajar en consolidar nuestro modelo, llevaremos la marca más allá y seguiremos conquistando esa cuota a través de nuevos clientes y de los ya fieles en nuestros 50 locales. Llevaremos a otro nivel el modelo operativo y buscaremos la eficiencia que contribuya a la buena experiencia del cliente.
